Chicken, Apple & Caramelized Onion Sandwiches with Parsnip fries!

Here's the recipe-
(2 T butter)
2 yellow onions, thinly sliced and caramelized
(Salt, pepper)
1 loaf whole wheat peasant bread, sliced
(4 T clean mayo)
1 rotisserie chicken (to make it easier, get one already cooked!), breasts
removed & sliced
2 Granny Smith apples, cored & sliced thick
6 slices Swiss cheese
2 lb parsnips, peeled & cut into “fries”
Heat oven to 375° F. To caramelize onions, heat butter in
heavy skillet. Add onion slices and cook for 4 - 5 minutes,
stirring occasionally, until browned. Season with salt and
pepper to taste. Place 12 bread slices on baking sheets.
Spread mayo onto 6 slices. Place slices of chicken on bread
slices spread with mayo. Top with apple slices and
caramelized onions. Top with Swiss cheese slices and finish
with bread. Bake sandwiches for 8 - 10 minutes.
Place parsnips on baking sheet. Drizzle with olive oil, salt,
pepper and garlic salt. Bake at 375° F for 40 minutes or until
slightly browned and soft on the inside.
